Coenobium'
Trebbiano, Malvasia & Verdicchio, Lazio, Italy
For such an easy, breezy & beautiful orange wine, weâd never expect it to be made in all seriousness by nuns at a monastery! Thatâs right â hailing from the Sisters of the Cisterian order of Vitorchiano, this co-fermented blend of regional Italian varieties was grown on volcanic soils, pours a light amber in the glass and has a distinctly mineral texture and tannin. Like any good potluck, no one came empty-handed â Trebbiano brings body, Verdicchio has a pleasant, green fennel note and Malvasia has that classic, orange blossom punch. Wild fermented in tank, aged for year & bottled unfined and unfiltered, expect a radiant, fruity-floral kick of baked green apple, fennel lemonade, clementine, apricot skin, pine needle, wildflower honey & a flinty, stony finish with a touch of welcome bitterness. Pair with A Room of Oneâs Own and a big bowl of fruit by an open window.
