Grown on the intense volcanic soils of the active Mt Etna, regional grapes Carricante & Grecanico Dorato are fermented in epoxy tanks with local yeasts and about 4 days of skin contact for structure & texture. Bust out the Zaltos for this babe, sprawling & complex, a smokey savoury mountain song of fresh grated ginger, manuka honey, dried pear, & strong black tea.
