An earthy, umami-riddled ultra rare red from a Mount Etna maestro. Immersed in wine from a young age as the son of a Belgian wine broker, Frank Cornelissen fell in love with wine early on, laying the groundwork for his famed, grape-soaked future. This pure nerello mascalese comes from their ungrafted, 80+ year old vineyard in contrada Zottorinoto, in the section called Chiusa Spagnolo (or CS) near the lava-liscious valley floor.  Bunches are destemmed and lightly crushed and left to soak for 50 days before 18 months in tank and another 18 ageing in bottle. Think volcanic, nebbiolo-like lightening rod. Briar rose meets juniper, the last drops from a leather-bound canteen, grandpa’s strawberry jam, many mushrooms on a log, resin, chilli roasted meat & smoked salt. Drink with lamb kebabs, mint yoghurt and garlic sauce.
