Montreal born, globally experienced winemaker Patrick Piuze worked with respected winemakers Olivier Leflaive, Jean-Marie Guffens and Jean-Marc Brocard before beginning his high-spirited project in 2008. Patrick hunts down old vines from top notch growers, picks the fruit by hand himself, and works tirelessly to express the unique aspects of the Chablis region, grapes and year for us all to drink in. We snapped at the chance to share his gorgeous zero-dosage sparkling release. Green apple granola with almond slivers, a side of lemon wedges, quince essence, chalk & toasted brioche. Pour alongside fatty tuna, soft-shell crab and dragon rolls.
