The clayey soil of the region (20% sand, 45% silt, 35% clay) contributes greatly to the cultivation of local grape varieties such as spergola! Traditional method spergola spends nine months on lees for a sultry-textured bubble, and is re-fermented in bottle with the addition of chilled grape must. FUN FACT! Every bottle made is filled, riddled & disgorged by hand! Toasty florals, bee party, green apple, Fleishmann's yeast, savoury jujube, dry liquorice root, meyer lemon & a mineral cradle.
