A crisp, clear and cold-climate zero-zero blanc de noir from Quebec legends. Pinard & Filles is Catherine Belanger and Frederic Simon’s incomparable project, consisting of an organically farmed 2.2 hectares and full embrace of experimentation, minimal-intervention & the lesser-known hybrid grapes that are right at home in their rural Quebec town. Year after shining year, these wines are thought-provoking and introspective, yet undeniably, endlessly quaffable. The versatile, aromatic and mineral pinot noir was direct pressed, fermented, and aged for 18 months on lees in old burgundy barrels and emerged as this crystalline, statuesque white. Eye-of-the-peacock hued, hydrangea, white currant, sweet butter popcorn reduction, melting iceberg in a snowstorm, a supple, gauzy texture, icing & a stream inside a cave. Enjoy with a trout and dandelion green salad.
