A white sparkling made in the Lambrusco region that has stolen our hearts! From the hillside village of Castelvetro di Modena in the Emilia-Romagna region, winemaker Max Brondolo is busy keeping several regional grape varieties alive. He diligently works his 6.5 hectares of organic and biodynamically-tended vines, PLUS 5 adjacent hectares of forests, lakes and flowery glens! This bottle highlights the too-often-underestimated aromatic trebbiano famiglia, blending trebbiano modenese and trebbiano di spagna. Typically used for the production of balsamic vinegar, here grapes are destemmed, gently pressed and rested for nine months between steel tanks and cement to calm and collect. Their journey continues in a classic rifermentato style, with a secondary fermentation in bottle, triggered by the addition of unfermented grape must during the waxing moon. The final bubbly product is left undisgorged for a cloudy, textural delight. A sweep of yellow peaches, green mango and apple blossoms, tangy preserved lemon, hay & a familiar anise warmth. Enjoy alongside sweet and savoury crepe brunches.
