A mineral, candied and crushable Piedmont LITRE rosĂ©. Cinzia and Fausto Cellario are third generation winemakers, fermenting away in the western outskirts of the Langhe. They choose to exclusively work with organic farming practices and regional Piedmontese grape varieties, while fiercely defending the local winemaking traditions they grew up with. From two vineyards, the gentle, black-fruited dolcetto and aromatic, herbaceous nebbiolo are macerated on skins for 24 hours to take just a pinch of stricture, before being pressed off and aged in cement tanks. Pink ring pop hued, elderflower, strawberry rhubarb jam, kiwi lemonade, swedish berries, spunky spices, walking down a gravel road at dawn & a swift leather undercurrent. Enjoy alongside sliced mozzarella di bufala, basil and heirloom tomatoes.Â
