A mineral, textured and tree-fruity orange pet-nat. Cinzia and Fausto Cellario are third generation winemakers, fermenting away in the western outskirts of the Langhe. They choose to exclusively work with organic farming practices and regional Piedmontese grape varieties, while fiercely defending the local winemaking traditions they grew up with. Grown on marl soils, the aromatic, earthy moscato giallo and citric, herbal & utterly RARE nascetta undergo five days on skins, and are bottled with saved must from the estate's late-harvest grapes (meaning juice, skins, seeds and stems with a high SUGAR content!) to start a secondary fermentation in the bottle and create festive bubbles. Lemon pithy, pear sorbet, yellow apricots and salted butter on sourdough, fennel, flowering mint, beeswax & salty, tactile bubbles. Pour alongside a stuffed crust pizza.Â
