Sauvignon Blanc, Pouilly-Fumé, Loire, France 

First born, that angel baby, making us think of the first time we heard Sweet Child O’ Mine by Guns n’ Roses. Fifth generation winemaker Jonathan joined vineyards with his family estate in 2010 – after proving to his father the benefits of organic farming – and since 2016 have been the first and only biodynamic vineyard in all of the Pouilly-FumĆ© appellation. This Sauvy B is grown across vineyards that cover the gamut of Pouilly's soil types including, limestone, silica and flint that inject a jolt of minerality in their wines. The shrewd yields of grapes are harvested from young vineyards & whole bunch pressed, plus some stem crushing for structure. Later, ageing takes place over the winter in stainless steel tanks, on the lees, for between six & eight months. Beach grass, bay melon, pineapple mimosa, fire circle stones, pear cream & chalky minerality. Pair with charcoal grilled fennel pork sausage, kisses that make everything better & goat cheese.
