Müller Thurgau, Chardonnay, Pinot Bianco & Sylvaner, Trentino-Alto Adige, Italy

An aromatic, citric and volcanic Northern Italian STAR orange hiding in plain sight. Third generation winemaker Martin Gojer took over the Trentino-Alto-Adige family estate in 2008 with partner Marion Untersulzner. A small, family operation, their 3.5 hectare property on the sharp slopes above Bolzano, north-east Italy remains uncertified, but works steadfastly according to the principles of biodynamics. ‘Tonsur’ is a blend of 36 year-old aromatic, herbaceous müller thurgau (55%), plushy chardonnay, floral pinot bianco and mineral sylvaner (making up the remaining 45%). The grapes are 50% direct pressed and 50% macerated in whole clusters for a simple five hours before 12 months in barrel rounding out the ridges. Matching white corsages, fallen peaches, lemon peels, sour orange slushie, crushed black rock & a corduroy texture. Pour alongside squashes, warm grain salads and chestnut dishes.
