A heartwarming wine, carrying history, pride & tradition on its shoulders. K&M is a family owned & biodynamic certified winery located in Istria, Slovenia – a coastal never-never land, producing delightfully delicious wines. Grown on sandstone with plenty of marine sediment, the grapes are left for four days of cold maceration to extract soft, inviting tannins, before sitting on lees for 20 months to mature. Refosk (or refosco) is a very dark skinned grape, considered to be one of the oldest varieties originating from the area between the karst and coastal Slovenia. Karst is a plateau region where the dissolving of bedrock has created sinkholes, sinking streams, caves, and springs, etc. Fruit mash, purple flower, cranberries on a log, rosemary twigs, blueberry juice, ground cloves sitting in great-grandma’s spice cabinet.
