In recent vintages his cuvĂ©es have been created out of determination in the face of climate instability and destruction by frost, hail or rain, leading him to rely on purchasing grapes from trusted growers. The seven year-old, uncompromising and romantic romorantin (sourced from ChĂąteau de Montcrochet in FougĂšres sur BiĂšvre) used for âOne Shotâ was direct-pressed and aged in amphora for 20 months to take this undeniably delectable final form. Strawberry-kiwi-oreo blended frozen yoghurt from yogen frĂŒz circa 2010, pebbly minerality, white Haribo gummy bear, saltyyyyy frangipane, white flowers & a serpentining cave system.
