We were stunned by the precision & FORCE of these zero-zero (or additive free!) teeny-tiny batch Champagnes, and are THRILLED to bring them to you. Salima and Alain Cordeuilâs organic four hectares are sitting pretty in the village of NoĂ© les Mallets, in the elevated, southern CĂŽte des Bar sub-region of Champagne. Their work is gentle, extremely low-intervention and explores the possibilities of regionally synonymous grapes through full phenolic ripeness and extended lees aging. A brut nature, âOriginesâ is a blend of 65 year-old plush, mineral and citric chardonnay (65%) and earthy, spiced pinot noir (35%) grown on calcareous-clay, direct-pressed and aged in neutral oak for many, many moons. Smoky limestone reduction, almond butter thumbprint cookie, sake-esque mushroom-iness, light green bitters, pomelo rind, country rye blend loaf, sweet anise, noble acidity that charges forward ready to do battle, a bog, a gold digging stream, mossy and muddy, pumpkin, salty sweat, silken bubbles & sweet corn. The ultimate autumnal champagne, enjoy alongside anything topped with first of the season shaved porcinis.Â
