Taking over the family vineyard at the tender ages of 16 and 19, they converted it entirely to biodynamics with Simon focused on farming and Gabriel working in the cellar. From a number of parcels, this 1 L bottle of Riesling was wild fermented and aged in tank for 6 months. Limeade with the limes left in it for too long, pithy and slightly bitter with a rocky edge to it, green sour candy, green apple, the feeling of drinking a green juice, white marble countertop & a lick of wildflower honey with the faintest zip of fizz to keep the fun up.
