A spiced, smoked and cherry-blasting red Burgundy. A leader in organic and biodynamic viticulture, non-interventionist winemaker Sylvain Pataille grew up in and around vines spurring him into attending winemaking school in Beaune, finding his own vines and working as consulting oenologist for some of the regionâs most famed domaines. Sylvain got his first hectare of vines in 1999, and slowly grew into his now 14 hectares of owned and rented land, home to aligotĂ©, chardonnay and pinot noir. From a few parcels across Marsannay planted between 1950-1980 (totalling 2.4 hectares), the grapes are pressed 30% whole-cluster to pull bright-bitterness and aged for 18 months to fully flesh out its ideas. Candied cherry, woody spices, wild plums, mineral water, peony garden, smoked mushrooms, cracked earth, clove & vanilla float. Enjoy alongside wagyu Korean BBQ.Â
