From Jura, a plush and fruited Chardonnay with a seam of minerality. Daniel Dugois thoughtfully farmed and expanded his two hectares of land in Les Arsures—his home village 5 km from Arbois city centre, eventually passing it on to his son Phillipe in 2013. Today, alongside his wife Melanie, Phillipe farms their 40 to 45-year-old vines biodynamically. Grapes of the ‘Terre de Marne’ go through a 15-day ferment before 12 months aging in used oak barrels. Lush and nutty with pleasing tartness, think texturally driven with an acid core. Peach zest, quenelled butter, cast-iron toasted sourdough, almond croissants, salt-muddled Golden Delicious and honey-dipped vanilla blossom. For the daring cheeses, grilled pork, meticulous pâté en croute and butter-drenched morels.
