An earthy, chalky and aromatic Brut Nature from GWIâs second Champagne producer!! TimothĂ©e Stroebel works in the northern premier cru village of Villes Allerand, cultivating the vines his grandfather planted in the 1960s and turning them into some of the most exciting Champagnes and Coteaux Champenois the world has ever known. FUN FACT! Working his soils with the horses Bijou and Quina and a trusty plough, TimothĂ©e also employs natural mildew preventatives, such as microbe-enriched water, orange oil and compost teas to protect the vines without destabilizing the ecosystem! The âHĂ©racliteâ pinot noir comes from two parcels, the first called âMontrevalâ, with silty-sandy soils (great for heightened aromatics) and full southern exposure, the second on deep clay (good for slow ripening, and promoting richer, fuller-bodied wines) facing north and called âLes Cuminesâ. The grapes were direct pressed and aged for three years on the lees winding their way round each other and emerging as this contemplative, coy and calculated cuvĂ©e. FUN FACT #2! Heraclitus was an ancient Greek philosopher known for his ideas on constant change, the unity of opposites and the humdinger we still say today, "No man ever steps in the same river twiceâ â sounds like he was talking about winemaking to us! Elderflower and hay harvesting, blueberry parfait, rosehips, white chocolate, pile of rocks, hazelnut praline, white pepper, overgrown ground cover, a cream puff weight & a chalky texture.
