In the vineyards they keep additions to an absolute minimum, monitoring the presence of fungi and insects before intervening and using options like orange extracts, copper and bee propolis (from their bees) to treat the vines only when necessary! The cortese sees 12 hours on skins for texture, is fermented once, then unfermented must is added to start the second fermentation after bottling for a naturally bursting bubble. Round Dreamworks kinda cloudiness, herb garden, honey pot, salted nuts that nod towards fino sherry, oat biscuit, salivating tartness & grapefruit pith bitterness. Pour alongside scallion pancakes with beef tongue.
