A floral, mountainous and mineral white grape you should drink more of! Bugey, France’s smallest appelation, is a gathered, mountainous relief in the southern extension of the Jura massif, housing a patchwork of terroirs. Here, Yves Duport biodynamically farms 12 hectares of stunning, inherited vines with a massive respect for mother nature. The altesse (also called roussette) comes from soils of white clay strewn with ammonites. Grapes are picked at the end of harvest, when they are reddish-brown, close to sur-maturité (over-maturity) to capture their richness and power. An “élevage sur lies” (ageing on lees) lasts for several months and locks in texture and aromatics. Grass-fed sheep yoghurt with honey, eucalyptus, ripe nectarine, grapefruit rind & finger lime segments. Pour alongside anything dipped in ranch.
