A graceful, bold and enchanting sauvy b to covet and contemplate. After dropping out of high school (#followyourheart), Pierre-Olivier apprenticed at the famed Clos du Tue-Boeuf with brothers Thierry and Jean Marie Puzelat, and then worked side-by-side for many years with Thierry as Domaine Puzelat-Bonhomme. Today, Pierre-Olivier farms 10 hectares of his own vines and rents an additional six, with an admirable focus on single variety expressions of both highly favoured and near forgotten Loire valley grapes. Thésée is a small commune in the Loire-et-Cher department boasting glowingly white limestone soils. Picked by hand, the sauvignon spends 10 months in large neutral wood demi-muids, followed by a year in bottle prior to release to make sure it is at its absolute best. White pear thickness, underripe peach acidity, a peck on the cheek of residual sugar (rs) like the first time you and your crush say goodbye and you realize how hard you are in fact crushing. A lil salt, white lilac, dissolved chalk texture & of course, a chalky minerality. Enjoy while watching the upcoming week-long Geminids meteor shower, but specifically mark your calendar for December 13th & 14th!
