A fantastical pet-nat, the Brand Bros recommend you incorporate the tasty lees at the bottom of the bottle before opening by gingerly turning it upside down and right side up (aka a calm shake!) before carefully opening (the more vigorous the shake, the longer the wait to prevent explosion!). YEEHAW! The pair of fifth-generation winemakers, Daniel and Jonas, work out of the northern end of Pfalz, Germany and have made an incredible reputation for themselves as leaders in the global natural wine community. Three weeks of skin fermentation (without stems) and clearly undisgorged, Shake & Wait is a real outlaw. Spurting forth with green apple lolly, citric high kicks, a roughly textured, leesy richness jabbing through the rocketing palate. Enjoy when you have a few minutes to spare, SHAKEâŠand wAiT!
