An expertly aged, concentrated apple brandy full of dense fruit, spice & history. Julien Frémont is a natural cider-making pioneer in the Pays d’Auge, pressing apples with 18th century technology his ancestors used, and tenderly encouraging the biodiversity of his family’s 15 hectares of orchards and 25 hectares of pasture with organic and biodynamic principals. FUN FACT! Julien is one of the only producers in Calvados (yes, both a place and a drink!) focusing on letting heirloom apple varieties show off their unique characteristics, acidity, and intensity through minimal intervention! Before pressing for this Calvados, Julien ‘cures’ the apples for at least a month in an ancient loft space (sometimes for many months), so that flavours can concentrate as the apples dry out. These apples were pressed in 2015 and fermented into cider, aged for two years in 100+ year old large oak barrels, distilled in 2017 and moved into new old French oak barrels for two months (to add some round, oaky characteristics), then back to old oak for an additional five years of ageing – what a life! Floral sniffs, densely earthy, spiced and velvety, elegantly laced with vanilla pod, baked caramel apple blossom & CINNAMON sprinkled tannins.
