Consistency in Chaos'

Syrah, Sonoma Valley, California

They’re finally here and they’re DELICIOUS! New to our Ontario market, young Bay Area nĂ©gociant Brent Mayeaux (aka Stagiaire) works with vineyards that are baseline organic, or actively seeking thoughtful and regenerative practices. FUN FACT! Since 2018 he had been farming a few parcels of his own, before deciding in 2022 to focus his attention to winemaking and exclusively supporting local low-intervention farmers. 100% giving and spicy syrah from a plot planted by iconic pioneering viticulturist Phil Coturri in the ‘90s. The valley floor location is cooler, and brings more fog influence during cooler vintages - think lighter bodies, tartness & protection from sun and heat damage. A curated affair of 33% whole cluster, 33% destemmed & 33% direct-pressed grapes - poured over like milk onto cereal - and left for three weeks to stew. Purply-blue like a bruised shin, thin mints, sappy herbs, steak cooked rare & being convinced that hypnosis is real. Enjoy with an unhinged dining experience of Japanese-meets-Italian-meets-Brazilian, while some lovely Metallica-meets-Bach-meets-ABBA-meets-Snoop Dogg, plays sweetly in the background.
