RaĂșl Moreno Yague is a multifaceted Renaissance man of sorts with cooking, restaurant-owning and winemaking experience that extends across Australia, France, Spain, America & Portugal, #IllHaveWhatHesHaving. RaĂșl’s unique winemaking philosophy, along with a seemingly insatiable fascination for permaculture, soil health, biodiversity, minimal intervention, flor development, sun-drying grapes, amphora, and ancient regional varieties has us in awe! FUN FACT! The flagship ‘Destellos’ is made in the image of advice given by his Burgundian mentors, created with at least as much quality (or more) than his top cuvĂ©e! This blend of old-vine, thick-skinned palomino (80%, RaĂșl’s preferred clone Palo84) and mineral arinto (20%) sees a 24 hour skin-contact, before being aged on the lees in chestnut barrels (previously housing Amontillado and Oloroso sherry), and developing a thin veil of flor. Sherry-Lite, pulsating texture, salted mushroom, a fallen s’more burning in the fire, crystallized honey + propolis, chalkboard, 2024 Met Gala sand dress, apricot nectar, lime oil & smoked butter. Enjoy with spiced, mixed nuts, and a table full of tulips.
