These zero-zero white wines are some of the most compelling in the world, evocative and endlessly complex. From the highest vineyards with the most exposed bedrock, Ex Vero III was direct pressed into large barrels to develop all the texture and complexity. A 50/50 blend of morillon and chardonnay. Like a very cold spring or a very warm fall with a punchy nose of starfruit tinted VA, green algae covered rock reduction, kissing the palm of someones hand, oat flour, almond flowers, what we imagine a starfish would smell like, condensed milk powder & a cool spiced ending. Dreamy in the extreme, this brilliant & precise wine is too good for the city & is ready for life on the commune.
