'Le Peur du Rouge'

A singular, nearly unrecognizable chard from a new to Ontario, legendary producer! With over twenty years of experience, Axel Prüfer farms and works in a zero-zero fashion in La Tour-sur-Orb, his panoramic vineyards surrounded by woods and teeming with biodiversity. FUN FACT! To protect the plants from hungry wild boars, Axel famously collects human hair from the hairdressers in the local village and spreads it around the vineyard to dissuade them! ‘Le Peur du Rouge’ or “red scare” is Axel’s only white wine (but can we even call it white?), from four separate harvests (picked underripe and overripe) of rich n’ round chardonnay, all separately carbonically macerated prior to blending for optimal balance. Yuzushu, white pepper, sword stuck in the limestone, apricot pits, pressed vinyl, peeling lychees, guava mash, tiny wild raspberries & tart plum skins.
