A verdant, textured and gently spiced zero-zero Czech blau. From the historic Znojmo wine region, Martin Vajcner works with a passion for winemaking and geology â vinifying each plot separately, in a non-intervention fashion, to exhibit his diverse array of soil characters. FUN FACT! Martinâs incredibly long winemaking lineage dates back to the early 1600âs when his kin were known as the âWeinschnittsâ, or âvine-cuttersâ! The 22-year-old blau vines come from paleozoic quartz and ground down quartz sands in the village of TÄĆĄetice. Grapes are semi-carbonically macerated for 10 days boosting aromatics before being matured in French oak for 12 months. A fun matchstick reduction, a cloudy smell like humidity or rain, sliced green pepper, pretty buttercream-red-mulberry icing, green peppercorn, celery juice & a magenta taste like if dragonfruit skin was its own fruit. Enjoy with a chopped corned beef reuben stuffed with kraut.Â
