Mathilde and Florian Beck-Hartweg are gifted young winemakers practicing organic farming, minimal intervention cellar work & a no-till stance on soil cultivation. Pinot blanc, auxerrois, and riesling all hand-harvested from aromatic-encouraging silt soils. Bottled with a dosage to kickstart secondary fermentation (aka champagne method), and aged 36 months in bottle on plush lees, before disgorging for a crystal clear finished wine. Honeysuckle, caramel toast, green and yellow apple, driving minerality, yarrow flowers, anise & apricot skin. Enjoy with anything wrapped in puff pastry.
