OUR FIRST COLLAB with one of our fave new Ontario producers, BON SANG! If you havenât heard of or tasted anything from Bon Sang! yet (where have you been?), they are busy bees, making delicious, guzzle-able, and low intervention wine out of underrepresented hybrid and regional grapes from responsible growers across Ontario. Our sweet child SCHATZI is a hybrid red-white blend that we sorted, stepped-on and pressed together on a cool, 2024 fall day in Vineland. The deeply berried and spiced marquette (70%) is partially direct pressed, partially macerated to pull colour and mischievous tannins, and the tropical, bright vidal and citric, mineral seyval blanc (30%) are left whole cluster and tossed into direct pressed marquette in a trempette style (think tea bag into hot water). FUN FACT! For the local obsessed sweeties, the fruit came from Hessenland Inn and Schatz winery (Lake Huron), as well as a bit from St. Thomas (south of London)! Labrusca vibes all around, welch's concord gummies, grapefruit oil meets tangerine slice, cocoa mint cookie essence, underripe blackberry & purple lilac.
