Passionate grower and keen observer of spontaneous fermentation Mario Siragusa is a truck driver in his day-to-day life! When he’s not riding the roads in the big rigs, he’s exploring long forgotten vineyards and local Piedmontese grapes we’ve never heard of. Determined to revive old traditions in Rubiana, he is single-handedly shifting our understanding of what’s possible from otherwise familiar terrain. Win’d Pum is a nod to an older style of beverage made out of necessity following the First World War where nothing went to waste. Here, foraged fallen apples are fermented with grape pomace to produce a refreshing, slightly fizzy hybrid drink that is as much about terroir as it is about crushability - wild, fruity, earthy, and just dang fun.
