The destemmed gamay is macerated on skins for 10 days at a cool temperature to allow for a gentle extraction, before a light press into neutral French oak for seven months of mellowing. Think Ontario wears a Fleurie-suit! Huckleberry, dehydrated orange, boysenberry, tree bark, ‘cool mint’ gum, raspberry fruit rollup, acid lighting hitting your tongue & a lengthy finish that shimmers majestically. Pour alongside learning to make macrame plant holders & thinking about the spectacle of Beaujolais Nouveau Day!
