Alessandro Violaâs 20 hectare estate sits on the north-western coast of the volcano-sprung Sicily, where he works the vineyard and cellar in his own vision, cultivated by his degrees in viticulture and enology. The âBlanc de Blancs Pas DosĂ©â is made from 100% catarratto grapes, grown organically in Sicily's Fastuchera district (a name that encompasses several agricultural areas) on limestone soils. Made in the methode champenoise and aged on the lees in bottle for a minimum of 20 months before disgorging (expelling the lees), this bubble has truly taken the time to get to know itself, and now itâs your turn. Lemon verbena, sage brush, cinnamon, pear and guava jam on toasted brioche, salt, honey and spice roasted nut mix & orange blossom water. Pour alongside warm farrow salads with raisins, olives and red onions.Â
