Andi Weigand is a third generation winemaker growing and fermenting grapes in Weigand, Germany, and while he has modernized the winery, he has also maintained tradition: every grape is picked by hand, with incredible attention to detail. The grapes picked from 30-year-old vines on marl and limestone soils, direct-pressed with an 80-year-old basket press, and aged for nine months on lees to get it ready for the spotlight. Flinty, crisp peaches, kumquat shaved ice, chalky minerality, apple hand pies, grapefruit zest & a salt packet. Pour alongside the Thai Goong Ten, also known as dancing shrimp!
