Camille and Mathieu Apffel work in a zero-zero fashion, with a warm-respect and keen focus on the alluring local white grapes, altesse and jacquĂšre. Their 4.5 hectares are packed with hearty, tenderly cared for ecosystems, a safe haven in the vast expanse of jutting mountain ranges. (not so) FUN FACT! This cuvĂ©e is named in remembrance of a day in 2019 when a violent hailstorm ravaged 80% (!!!!!) of their old jacquĂšre vines. The leafy and vibrant jacquĂšre is direct pressed and aged on lees to plump and propel the local grape into demure unforgettability. Morning air after the storm, frosty grass, daisies and bee pollen, underripe pear juice, honey thinned butter, chiseled acid like a romantic roman nose bridge, stone skipping, yellow kiwi skin salted into forever & a harmonious consistency that undulates between thick and thin. Enjoy with red snapper ceviche â red onion, blood orange & shaved castelvetrano olive.
