A magnificent chard, with an exciting mineral texture reminiscent of Joan Jett’s raspy voice. Winemakers Julien Altaber and Carole Schwab are deep diving, master grape-wranglers & organic voyagers who don’t pander to anyone’s expectations of what Burgundy could or should be. 90% of Sextant wines are made with négoce fruit, supporting and giving incentive for more growers in the area to farm better. This organic chard comes from within Saint-Aubin, sees a direct-press and the resulting wine ages for one year with its fine lees to infuse texture and sustain aromatics. Alluring and unassuming in complex maturit. Mineral aromas, honeyed grapefruit, citrus peel, toasted green apple, nervous acidity, leading into a gentle attack of exotic fruit & a touch of salinity. Pour alongside a night of all white – white rice, cream sauce and poached haddock.
