Piquette

Cabernet Franc, Hillier, Prince Edward County (PEC), Ontario

We love a chic lil up-cycle moment, and this delicious, low-alcohol banger came straight from Flavourtown (ℱ Guy Fieri). Experienced winemaker Mackenzie Brisbois, is delivering minimal intervention wines from PEC that are intriguing to say the least. ‘Piquette’, also known as ‘second wine’, is made from a second pressing of grapes. Trail Estate pressed these luscious cab franc grapes gently, and they therefor were left with juicier grape pomace (skins). To the pomace they add a bit of water and ferment a second time, and their personal little twist is adding herb & botanical infusions sourced from their property! PLUS, an incorporation of flor-aged verjus was made for a surge of acidity. A welcome spritz that can turn any weekday into a small celebration, with light green pepper, honey xun, sour cherry, sour patch kids, cranberry mocktail & resilient cab tannins. Not your average Cabernet Franc by a long shot, chill and enjoy with ritz cracker sandwiches on the beach.
