Some amphorae live underground between vineyard rows (bubbling away under the rain, snow and grazing sheep) because he wants to ferment only with the wild yeasts from the vineyard, not those living in the winery. This way, he says, "the wines breathe in the same soils in which they were grown, with the same vibrationsâ. Certified organic alongside practicing biodynamic farming techniques, these 25 year-old vines on calcareous soil are a mere 6 km from the sea (can you say location, location, location?). Macerated whole-cluster for 10 days brings structure and rose-petal textured tannins. Petrichor, oyster salinity, straw bale, grapefruit essential oil, campari & dehydrated orange peel.
