This Xarel-lo is unexpected and filled with excitement, much like the spotting of an elusive Long-Eared Cat-Owl in Spain â you can see the secrets they keep in their expressions alone! Innovative and restless winemaker Eduard Pie Palomar, is organically farming 18 acres of family owned and rented vineyards, where he works exclusively with local grapes & fermentations in amphorae. Harvested from 20 year old Xarel-lo vines, planted at the base of MassĂs de Bonastre (a protected natural area) on mountainous, loamy-calcareous soils, close to the sea & surrounded by olive trees. After harvesting, the grapes undergo a 90 day maceration & fermentation in amphorae. Plus, an additional 7 months in stainless steel tank with lees to add integrated texture. The colour of fresh straw, with ripe, white fruits, Mediterranean forest, tangelo, dry hanging flowers, salty hair & green sour gummies. Drink with 1000 anchovies and bottomless crispy sourdough because you really do give a hoot!
