'Cecilia'

Like cliff-jumping in a fairytale wonderland and landing in a tepid, invigorating & mineral pool – an assembly from the fountain of youth. Austrian winemakers Eduard and Stephanie have become stars of the natural wine scene, and for good reason. Cecelia is tended with biodynamic principles and comes from a newly unveiled 1.4ha limestone vineyard, planted with red and white grapes. 2/3 of the grapes are pressed directly and 1/3 are crushed. The fermentation is spontaneous and takes place in large wooden vats & is neither fined nor filtered – giving Cecilia a slight grain, like fine sand in a cantering stream. Supremely elegant, like a cocker spaniel in a ruby crown. Strawberry leaf, licking a diamond, blood orange buried in rocks, rosewater & bitter herb tannins form a mosaic of texture to traverse.
