Originally from Normandy, SĂ©bastien Chatillon worked as the head sommelier of Le Chateaubriand in Paris for seven years before moving to Vallabrix (in the Gard) to begin Ad Vinum in 2016. SĂ©bastien previously worked with RenĂ© Mosse in Anjou, an experience that opened his world to natural wine and inspired the direction Ad Vinum was to take. âFahrenheitâ is a co-maceration of organically grown grenache and syrah, aged in neutral oak for nine months collecting itself along the way. The 70yr old vines pull mineral richness from deep within the clay and limestone soils, giving this wine its charmingly secure footing. Fluidity, purple rocks, fresh ping pong-ing acidity, orange atomizer & grilled green plum. Pour alongside stuffed mushrooms & listening to Dave Van Ronk.
