âBastardaâ
Trousseau, Galicia, Spain
An aromatic, romantic and herbaceous trousseau for lovers of Burgundy, Jura, but most of all, Galicia! Fedellos was started in 2013 by Luis Taboada and winemakers Curro Barreño and JesĂșs Olivares in the gorgeous, north-west slopes of Ribeira Sacra. Farming organically, the steep, terraced vineyards of regional vines are only worked by the tenderest of touches, and showcase the regional influences as clear as the nose on your face. FUN FACT! 'Bastarda' is one of the many aliases of trousseau, brought through Spain by Benedictine monks! From many tiny parcels around the cooler outskirts of Ribeira Sacra, the trousseau vines range between 15-70 years old, and grapes are whole cluster macerated to fully indulge in the aromatics and then rested for a year to smooth out. Duelling between lush and lithe, raspberries fractured by purple and yellow never-ending florals, crochet doily tannins, slate slurry minerality & spellbinding herbs, stems, leaves nâ all. Pour alongside roasted fennel and warm grain salads with feta. Â
