Pinard & Filles, aka Catherine Belanger and Frederic Simon, organically farm a tiny 2.2 hectares and fully embrace experimentation, minimal-intervention & are famed for their ability to lift the less appreciated, hybrid grapes up to their regal, cold-climate pedestal. An equal, four-way split of the grapes that typically go into their beloved âFrangineâ and âVin de Jardinâ; the boldly cherried frontenac noir (25%), honeyed frontenac gris (25%) & citric, tropical frontenac blanc (25%) are semi-carbonically macerated, while the luscious la crescent (25%) is macerated for 120 days stealing aromatics. A JUICY, grape juice core spilling over a wooden fence, lavender, mint, nordic berries & a lune de mielâs worth of long-lasting acidity.
