âControlled Chaosâ
Pinot Noir & Pinot Gris, Balaton, Hungary
A succulently tart, volcanically mineral and wild-fruited red-white blend from Hungary. Just in from GWI and available in Ontario for the first time, KolĂłnia 52 is the collaboration between young gun winemakers AnnamĂĄria Török and Attila Francisti in Balaton, Hungary. The property is cared for following organic and biodynamic practices and is composed of volcanic soil (basalt) with limestone, sand and clay, and the winemaking is carried out in pristine low-intervention. âControlled Chaosâ is always a red and white co-fermentation, and has been made steadily since 2019 when Anna was working in Austria for Michael Gindl and purchased some rotburger, riesling and grĂŒner from him! This hotter 2024 vintage is a near 50/50 blend of 10-day, whole cluster semi-carbonically macerated pinot noir and direct pressed pinot gris left to rest between big oak barrels and amphoras. Green plum umeboshi, cave air, salmonberry, lemony acid and fruity rosehip jam sweetness wrap around in a dancing, spiralling helix, grey rocks, silky smooth texture & violets pressed between pages. Pour alongside schnitzel with sauerkraut and horseradish-y potato salads.Â
