A mineral, tension-fuelled and zero-zero Czech riesling to savour. Situated near the otherworldly Thaytal National Park, Martin Vajcner’s certified organic vineyards are spread across the ancient Znojmo wine region in the Czech Republic. Everything is made in Martin’s grandfather’s old underground cellar, the farming and harvesting carried out by the whole family. Martin produly spends 95% of his time outside, tending his pristine 5.2 hectares. From old riesling vines in their limestone-heavy “U bunkru” vineyard in Ơatov (inside the National Park!), the grapes were hand-picked, direct-pressed, fermented and matured in old oak barrels with nothing added or removed at any point to let the land and grape shine through. Yellow crushed rockets, beeswax, chalky minerality, little melon, salt, foraging for wild herbs, vanilla & a lemon ZIP! Age for a few years or drink tonight alongside pan seared Ontario trout with a sauce of capers, dill, lemon juice, salt, pep and butter.
