A distilled Chilean sunrise that we get to experience for the first time in Ontario! Winemakers Daniela & Pablo of Vinos Mingaco farm one hectare of moscatel de alejandria organically, practising regenerative agriculture on their home plot. Living off the land, with a home built from the red clay of their hills, they practice an intentional, holistic lifestyle, promoting biodiversity in every thoughtful action. The vines are 30+ years old and have between seven and thirteen years under regenerative agriculture. Fermented and aged outdoors in amphora (tinaja), with whole bunch maceration for six months creates a plush viscosity perfect for leisurely sipping. Blossomy apple juice, limoncello snow-cone, whole dandelion, spearmint iced tea, golden chanterelle & succulent persimmon tannins. Pour alongside a garden of tiger lilies, forsythia & marsh marigold.
