Niepoort joined Equipo Navazos to birth this 100% Palomino Fino, harvested from historic Albariza vineyards, in the famed Spanish sherry region of Jerez de La Frontera. Two of the most prolific Spanish producers, following the same precision & finest winemaking techniques from the last 200 years of Andalusian history. The grapes were gently pressed, followed by fermentation with local yeast, in 40 year old American oak casks, called “bota”. The wine then aged for eight months with the fine lees under flor - where it developed its pronounced body & high-toned savoury qualities. Multi-dimensional honey, citrus pulp, chalky petrichor, mushrooms caps, almond peel, chamomile & lavender plunges & a salty finish that lingers like the Atlantic ocean in your hair.
