Well-travelled & minimal intervention winemaker, Mackenzie Brisbois, has settled here and from the rich limestone soils of PEC, is reeling in some big & impressive wine catches (check out her fine and fancy Chardonnays). The winery ethos states, âWe believe every wine should be surprising, textural and soulful; not predictableâ. 59% vivid Riesling, 35% perfumed GewĂŒrztraminer & 5% pale and punchy Muscat Ottonel. A mixture of skins was added to the top of each tank to create a cap and protect the wine from oxygen contact, then pressed off after a few weeks of adding tannin and structure to this oh so juicy bby. Pear blossom, grapefruit pulp, Orangina, mulled peaches with ginger spice & lime oil. Drink with pastry, popcorn or pancakes, this wine makes it wErK!
