A gorgeous, herby and endlessly drinkable orange from new-to-Ontario producer Pino Román. A committed guardian of Southern Chile’s Itata Valley, where own-rooted, bush vines have grown since the 1550s, winemaker Ignacio works to showcase authenticity through each and every cuvée. His north star is to be as gentle as possible throughout the winemaking process, allowing place and grape to dazzle. Destemmed, left on skins for three months and fermented in 200+(!) year old Chilean amphora, this chasselas is richly endowed in scent, texture & taste. Warm flowers on butter, fresh yarrow, tarragon, persimmon, white tea, carrot juice, grapefruit & old picture frame texture. Enjoy with Sichuan hotpot.
