‘Demain, C'est Loin’

Shavkapito, Tbilisi, Georgia

A stunningly-fine, mineral and herbaceous Georgian red impeccably balanced between density and unwavering lightness. It is no surprise it has become an instant staff fave! Winemakers Bastien Warskotte and Nino Gvantseladze focus exclusively on regional varieties, and their wines not only carry the 8000-year legacy of Georgian winemaking, but also belong to the new wave of winemakers reintroducing Georgia to the world. Made from fresh n’ lively FIVE year old vines, the grapes are left 50% whole cluster, while the rest are destemmed for two weeks of maceration and aged in old barrels for nine months easing their youthful ways. FUN FACT! They were inspired by the reds of Burgundy to make a lifted and light red, a style that is not as easy to come by in Georgia! SUPER KID ICE CREAM with the bubble gum in it opens quickly into the richest cherry imaginable (like the tree-ripened sour cherry juice served at breakfast in many parts of Georgia), salt, tea roses with stems, but also purple nerds, nettle and fenugreek greenness & emerging rock from the ocean kinda minerality. Pour alongside long conversations about the future that could use a fresh perspective.
